Some mornings it can be a struggle to get a quick healthy breakfast in our tummies, and I’m guilty of just having coffee some mornings. There are times when I have it together and those days happen when I plan ahead. When I make a big batch of muffins and have them in the freezer, or when I make baked oatmeal either ahead of time or in the crockpot, and another favorite of my kids is sweet potato pie(kind of like pumpkin but since they are sweeter I can add less sugar/honey/etc.). Sometimes we do eggs or egg sandwiches. I am on the lookout for some casserole recipes to try and get some veggies in them. Then of course there are always smoothies.
Here Are My Top 3 Fall Breakfast Recipes
I got this recipe from my friend Katrina who originally “messed up” another recipe. Honestly she made them better! They are super moist and delicious.
2 cups sugar
½ cup oil
2 16 oz cans of pumpkin or 1 large can
3 cups whole wheat flour or half whole wheat and half all purpose
2 tsp cinnamon
½ tsp nutmeg
½ tsp cloves
1 tsp ginger
2 tsp baking powder
2 tsp baking soda
1 tsp salt
Optional mini chocolate chips, raisins, or dried cranberries
Preheat oven to 375 degrees. In a medium mixing bowl, beat eggs slightly. Add sugar, oil, pumpkin and beat thoroughly. In a separate bowl, sift together the dry ingredients and stir into pumpkin mixture. Mix until smooth. Stir in extras. Fill greased or paper-lined muffin cups ⅔ full. Bake 15 to 20 minutes.
Tip: I have used all whole wheat flour, all all-purpose flour and a blend of the two. Use whatever you have on hand. They still turn out very moist for me even using all whole wheat flour.
Pumpkin Pie baked Oatmeal
I love this recipe for Pumpkin Pie Baked Oatmeal and I generally bake it in a water bath in my crockpot….because I hate scrubbing my crockpot! I use an oval dish and place it inside my crockpot filled with an inch or so of water.
Tip: Test your water level first because it’s not fun if you place your filled dish and the water overflows into the oatmeal. If I start this at night I set it to cook on low for 4-5 hours and then it stays on warm until we are ready to dig in.
Sweet Potato Pie
This Sweet Potato Pie is so yummy! I love the addition of coriander and cardamom into the standard pumpkin pie spice blend. Personally I have just made the filling from this recipe and I bake it in a casserole dish.
Tip: This recipe calls for almond milk or coconut milk but I have also subbed whole milk.
